This one is so simple!
Just use your favorite pancake mix and prepare as normal according to the instructions on the box. If you love the flavor of coconut, you can replace your water or milk with coconut water or coconut milk, but you may need to add a touch of sugar.
Here is where the real magic happens. After you have prepared your batter, add 1 cup of pureed mango or pineapple, 1 cup of diced bananas, and 1/2 cup of shredded coconut flakes. Cook on the griddle like a regular pancake. Top with honey and powdered sugar and enjoy!
